The change to mailbox_transport in postfix/main.cf fixed the problem.
Outlook now sends/accepts mail using the IMAP/POP3 Cyrus server. Thanks!

That means your changes of the main.cf are not enough, you have to tell
postfix
to deliver the mails to cyrus, because cyrus doesn't use Maildirs. This was
the reason

An imap client reads from an imap server not a location on the server. You
don't get mails,
because the server didn't get them. In the moment you have told postfix how
to deliver to
cyrus, you will see the mails in your mail client that you hopefully will
replace with
thunderbird soon.
If you would decide to install additional amavisd-new, spamassassin and
clamav from contrib I could help you with my postfix setup.
I could show you how to setup server side sorting in folder with a web
frontend too.
